“On the Menu” is a column that shares easy-to-follow, simple recipes that teachers can use in classes, either by actually having groups of learners prepare the dishes in the classroom or by demonstrating (or just describing) a recipe during class and having students prepare the recipe at home and bring the results back to class to share their work with others and to discuss the process. The recipes in “On the Menu” range from those that require no cooking to those that are excellent healthy options to those that are from various cultures and cuisines around the world.

I was saddened when my favorite Thai restaurant took their Thai Tomato Salad off the menu, so I had to re-create the recipe myself so I could make it at home. After extensive testing, I developed this very tasty, healthy recipe, which doesn’t require cooking and only calls for seven ingredients!
